Its Apple Time!

This past weekend Ian and I took advantage of a short break in the rain to visit our favorite orchard.  We were a little late in the season (they seemed to ready early this year) so we had to hunt around a bit but, we still managed to pick a good 12 pounds of apples and take home some freshly pressed cider.

In the past we have canned apple sauce and apple butter but this year we decided to try a low-sugar apple pie filling.  It seemed a bit more versatile than sauce or butter, we can use it in all sorts of desserts and baked goods and also as a topping for pancakes or oatmeal.  Pie filling is also much easier and faster to make.  No pureeing or mashing, no stirring a bubbling vat for hours.  It turned out great and we ended up with 11 jars.

11 full jars only put a small dent in our supply so now its time to break out the dehydrator and make some apple chips.  We also might end up making some sauce after all…it didn’t seem like that many apples when we were picking them!
